Foot Tread Riesling
First off, yes, we’ll have Riesling soon! 2021 is the first vintage we’ve brought in this lovely white wine grape. These clusters are from a beautiful vineyard in Sonoma and will become the newest addition to our Fifth Moon line. Some of the Riesling gets the royal treatment with a little foot treading, or pigéage, from our crew. Although stomping around on a bunch of grapes seems aggressive, it’s actually a much gentler technique than using machinery. Foot treading is an age-old way to extract the delicate flavor compounds and phenolics from the skin and ensure they end up in the finished wine.
